There are some Pg hawker fare like Char Koay Teow or Pg Curry, Prawn noodles that don't taste the same as these foreigners have not tasted enough of these dishes to be able to replicate them exactly. Even a plate of tortellini en Brodo (tortellini in broth) needs some skills to make because the right amount of cooking the stuffed pasta is needed while the sauce/soup itself needs the right blend of spices and simmering, something an Italian from Bologna would know compared to a Chinese cook. Same for Char Koay Teow, just putting the black sauce and light soya sauce, chilly paste, prawns will be just A fried noodle dish, if frying times are incorrect or wrong amount of dark sweet sauce is used..not the real thing.

PS, if these local dishes are cooked in hotels, taste is never the same due to wrong wok used or using gas fire instead of charcoal.

Regardless of whether you call it Cheebhai fan or Khani Nahu mee, it is a load of animal entrails with noodles or rice full of pork fat and left overs with MSG. Eat this cap at your peril and die.
